Another Week!

Another week has gone by and we are still at it.

When doing SHAPE make sure that you log not only what you eat and your daily weight but from time to time look at why you are doing it. What made you start the program to start with. Are you:

  • Trying to loose weight?
  • Control Diabetes?
  • Get your blood pressure under control?
  • Just trying to get your body as healthy as possible?

No matter why you started, make sure you keep your goal before you. If you don’t, you will start to forget and give up! If you stumble and fall, pick yourself up and brush yourself off and go at it again.

Nothing worth while is easy and this isn’t going to be either. As a person that loves to cook, thanks to my mother, this has been hard on my to switch cooking differently, but I am seeing the difference now and even on the bad days it is worth it!

Last week we had some of the same food and a few new ones. One of the new ones was roasted tomatoes on fish. I have never had anything like it, but we have actually had this dish twice now and really like it! It is easy to prepare and doesn’t take a lot of time.

Saturday we went to Fort Leonard Wood to watch our oldest, James, play in the Special Olympics at the state competition. We knew we were still on Phase 1 so couldn’t go out and eat, so we packed our lunch. Nothing big but at least we could keep with the program and enjoy it. For lunch we had tuna with lettuce and dill spears. cherry tomatoes and dried apples. For supper we had grilled chicken salad.

Yesterday we had spaghetti squash and roasted tomatoes. This was an oops. I thought spaghetti squash was on our list and it isn’t, so we will know better next time. 🙂

Last night we did something brand new and it was awesome. A beef enchilada. No we can’t have the typical stuff that goes into enchilada’s but this was terrific!!

For lunch today we had veggie pot pie. How do you do a pot pie without a crust? I used riced cauliflower and a tiny bit of cottage cheese mixed in it the cauliflower to make it crusty. It was perfect.

Has everything gone perfectly? NO! I made a goof this week, but it didn’t stop me and yes I enjoyed the dish anyway. So, I pick myself up and continue on.

I have taken this program to heart. I am working on a cookbook from those in the area for Phase 1. If you can cook Phase 1 stuff you will be able to do it all without any problems. So, I am working on the book with different ones in the area giving me recipes that they use.

I also stepped out to help with a special Facebook page for those that are in the area and are under Dr. Abrams care. Do I need something else to keep me busy? NO!!! But it is as much for me as for those in the community to help and encourage each other along the way. This isn’t just a short term program, it is for life.

So, onward we go taking it step by step.
